I LOVE fresh ceviche. Enjoying this snack makes me feel like I am visiting some beautiful tropical destination in Mexico… but I digress. Mixing super fresh ingredients and protein, I’m in!
Ingredients:
10-15 pieces of shrimp (raw, deveined, medium to large in size)
Bunch of Cilantro
2 Limes
1 - 1.5 Cups of Cherry Tomatoes (cut into quarters… yes each one. Worth it.)
1/2 Red Onion diced
1 Tsp white vinegar
Salt
I steamed my shrimp (in my steam oven - about 12 minutes) and then let cool. You can bake or boil, up to you! Just cook them.
Add chopped onion, chopped cilantro (about a handful), chopped tomatoes, white vinegar, and juice of 1 lime into a bowl. You may need an extra lime depending on how citrusy you like it. Once the shrimp has cooled cut into small pieces and add to the bowl. Salt to desired taste. I ate with some chips, but often eat just right out of the bowl.
