MY SEMI-HOME MADE EASY WEEKNIGHT DINNER

Rosemary Steak, Roasted Sweet Potatoes, Smashed Brussels


This semi home made meal was a perfect match to our busy nights. Plus it was super healthy and tasty! I won't bore you with the typical page long intro about why and how I came up with this meal... its bringing simple staples together for a well rounded macro-friendly meal! Let's eat for our fitness goals!


Items needed:

Trader Joe's pre-marinated Rosemary Steak


2 Sweet potatoes, washed and diced into about 1 inch cubes

1/2 large bag of brussles, or at least enough to feed your fam


salt, pepper, garlic, ghee or butter, EVOO, shredded parmesan


Pre heat oven to 400 degrees

Get a pot of water boiling

Hold off on cooking the steak - this will be towards the end of the baking process!


In a bowl toss the cubed sweet potato with EVOO, salt, pepper, garlic. On a baking sheet bake taters for about 30-35 minutes or until slightly browned and soft throughout.


When water boils, add WHOLE brussels for about 12-15 minutes or until soft. Then using a slotted spoon place brussels on a covered baking sheet and smash each one with the bottom of a cup (flat surface) super technical! lol.


Cover brussels with a drizzle of EVOO salt, pep, garlic, and parm cheese, add to oven with the taters, for about 20 minutes or until slightly browned.


When there is about 7 minutes left, heat a cast iron skillet, or similar, add a little Evoo, and a little Ghee. When hot enough sear the outside of the steak tips on each side then reduce heat and cover until medium rare-medum. Should be semi soft to the touch, try not to overcook!


Once everything is done baking, and steak tips are cooked to your liking, plate it up. Great protein, healthy carbs and veggies!
